I don't use vim, but I imagine that if someone hasn't written an addon specifically for octave, there is probably one for matlab that works just as well.  Just a google search for "matlab vim" seems to show a few promising candidates, I think.

I found a syntax plugin in vim site, but this plugin is for vim-6x.

How to use syntax highlight with vim-7x?
