octave2.1:4> __gnuplot_set__ terminal postscript
octave2.1:5> __gnuplot_set__ output "yourfile.eps"
octave2.1:6> plot(x)
octave2.1:7> ls *.eps
yourfile.eps
octave2.1:8> exit


I've ommited some lines, as I mistyped some stuff.
