If you're talking about the Matlab toolboxes, that depends on whether the Matlab license permits you to do that. Others on this list have said in the past that it does not. If you still want to use parts of Matlab, what is the point of switching anyway? If you need image processing tools, many of the same functions are available in the octave-forge package, which can be found at octave.sourceforge.net, and which is also available as a package for many Linux distributions.
