Matthias,

To implement your idea of successive polygons in gnuplot, you may want to
look at the demo 'fence plot' here :

http://gnuplot.sourceforge.net/demo/surface1.html

The idea is to do it in the parametric mode, where the variables are u and
v, so that you can control the position of each curve. Then, there is a
little work left to do in order to give the right color to the curve, see
with 'pm3d' and the fourth parameter of 'using' which will help you to
control the color.
