In what order did you install Aquaterm and gnuplot?
Did you compile gnuplot yourself, or did you use a prebuilt version from Fink
or DarwinPorts? The
configure script will tell you if it has found Aquaterm.
If so you can make a .gnuplot file with the following content:
set terminal aqua
