If you're referring to using the octave-forge function edit, you can either set your environmental variable EDITOR in your shell or set the veriable EDITOR within octave before invoking the edit command.

If you want more info on the edit command, you can get it by typing "help edit" at the octave command line.

If you're referring to something else, what system are you using (windows, debian, redhat, etc.) and how are you invoking the editor?
