Anya,

As a Mac user I have found that it is best to address Fink-specific
questions such as yours to the Fink mail lists.

All I can say is the the document installations and other dependency
problems were also a problem with my installations, and I finally installed
the octave 2.1.55 binaries from

http://hpc.sourceforge.net/

Which installs both octave and octave-forge at the same time. You then have
to have gnuplot (which I built from source without problems).

You should also be aware that you don't have to use X11 for graphics. See

http://aquaterm.sourceforge.net/
