The capability to concatenate structures was only just added to octave...
In the octave CVS you'll find that 

octave:1> A.x=5; B.x=7; C=[A,B]
C =
{
  x =

  (,
    [1] = 5
    [2] = 7
  ,)

}

Wait for the 2.1.58 release for this feature, which hopefully won't be
too much longer...
