Octave strings are character arrays (see 
http://www.octave.org/doc/octave_6.html ),
 so putting them together works as expected:

 a=['abc','def']
                   a = abcdef
 size(a)
                   1  6

while 

 a=['abc';'def']
                   a = abc
                       def
 size(a)
                   2  3
