In octave you should type (beware of escaped quotes),

  > filename = ""
  > a = sprintf("gset output \"%s\"", filename)
       a = gset output ""
  > eval(a)
  > gshow output
       output is sent to ''

which could be simplified to,

  > eval( sprintf("gset output \"%s\"", filename) )
