I don't know of any books, but you can download the Guix manual in PDF format 
to learn about Guix, the package manager, and Guix System, the full GNU 
operating system (https://guix.gnu.org/manual/en/guix.pdf). That could help if 
you don't have regular access to the Internet.

As for GNOME, if you decide to install Guix System with the GNOME desktop 
environment, once you log in to the desktop you will be presented with some 
Getting Started videos and documentation. You can then search the complete 
GNOME Help and other kind of documentation as you need it.
