If you use gnunet-insert with the "-V" switch, it should show you its
progress. It's mostly limited by disk access time, which can potentially be
improved if the OS caches certain files in memory.
Also, 'inserting' is more expensive than 'indexing', and indexing is what you
usually want (index is also the default for gnunet-insert).
