Looks like it's simply the result of auto-fill-mode.
AFAICT, nxml does not itself enable auto-fill, so it's probably due to your
enabling auto-fill in nxml-mode, maybe indirectly (by enabling it in
text-mode, which is a parent of nxml-mode). Try
(add-hook 'nxml-mode-hook
(lambda () (auto-fill-mode -1)))
