Sébastien,to me this setting makes no difference! I can start GNU Emacs 22 without this setting active, open my iso-latin-9 encoded file and print it with ps-spool-buffer-with faces. When I save the *PostScript* buffer under a different name, eval your code and 'print' again, the new *PostScript* buffer is only different in the printing date ...
