[bug#51079] [PATCH] gnu: fmt: Update to 8.0.1.

Hi Marius,

Thank you for reviewing these patches. Attached is a replacement patchset updating the 'fmt' dependent packages which are buildable with fmt 8.0.1, and adds a fmt-7 package then used by the packages which could not be updated. The only dependent package failing to build is hyperledger-iroha, which is currently failing to build on master.

This causes build failures in 'bear', 'celestia' and possibly others
(see './pre-inst-env guix refresh -l fmt').  Can you take a look?
