[bug#43044] Updates to git-lfs

Esteemed maintainers,

Attached are two patches to update the package git-lfs in gnu/packages/version-control.scm.

Patch0001 - adds two new phases to build and install man pages into the user's GUIX_PROFILE. This makes the git-lfs man pages available. `man git-lfs` have hitherto thrown "No manual entry for git-lfs". This patch fixes it.

Patch0002 - Upgrades package git-lfs to version 2.11.0
