You need to provide more information as to what Xserve you run (Model, 
e.g. Xserve 2,1   you see this in the system information stuff when you 
boot the OSX cd) and how much memory you have.

I've got an Xserve 2,1 to run with grub + a patch that phcoder wrote for 
me. I think it is in the SVN now though :)
