Have a look at Thoggen: http://thoggen.net/It allows you to rip DVDs to Ogg Theora streams. If you really must rip to AVI or MPEG, then Mencoder or FFMPEG are your best choices. Information on how to use them is available all over the net, as well as in their man pages.
