I like simplicity; plain styles are simple.

I cannot tell if it is really useful yet. This change is supposed to
ease switching from one processor to another, but no other processor is
relying on variants so far. Someoneā„¢ needs to write "oc-citeproc.el" or
"oc-biblatex.el" to see them in action.

So, I'll defer to your judgement.
