Looks like it has already found the plantuml.jar based on your provided log:

> org-plantuml-jar-path "/nix/store/2s91vgzv8ckhwq1hhxrf666q99z0pnhi-plantuml-8012/lib/plantuml.jar"  

I have not used plantuml, so I don't have anything more useful to comment on.

Sorry if I am using the wrong medium for asking for a feature, but I do
not know where else I should do it.

This is the right place to ask this question.
