Hi Grant,

Since org-structure-template-alist is defined in org.el, you could
modify it after org.el loads:

#+BEGIN_SRC emacs-lisp
  (eval-after-load "org"
    '(progn
       ;; modify org-structure-template-alist here
  ))
#+END_SRC
