Auto-stitch should work for schematics. If that doesn't work, try mimic-stitch.

- Is it possible to edit the parameters of several instances of a
module at once?  For example, I'd like to be able to highlight a bunch
of NMOSes and change all of their widths to 5.

That feature is not available. However, you can copy one instance (with the appropriate parameters set) and then select another instance and paste. The Paste operation, when something is selected, applies the copied object's information to the currently selected object. This includes parameter values.
