I believe you are implying a dovecot setup. Dovecot is already
implemented and provides both an imap and a pop server that supports
many mailbox backends (at least mbox and maildir).

GNU/Mailutils provide libraries that also support multiple mailbox
backends. Dovecot has its own implementation for them, so the 2
projects are distinct, they share no code.
Although mailutils provide an imap server implementation, we have used
dovecot in a production environment (around 300000 active users) and
seems OK. Of course our users are used to POP services and they only
use the imap server through a webmail.
Dovecot has an interesting secure coding architecture. Its code is
clean and is also well documented.
