stemUp = \property Voice.Stem \set #'direction = #1
stemDown = \property Voice.Stem \set #'direction = #-1
stemBoth= \property Voice.Stem \revert #'direction
Yikes.
I suggests that we completely remove override/reverting from the
default-properties. Replace them with set. Override/revert is too easy
to get wrong when you (the user) don't know what's going on.
