That depends on which iPod family you are talking about. I've added support for the iPod Nano 4th generation to gnupod last summer. That was pretty easy to do. I haven't looked at the 5th generation (with camera) just yet. Google tells me the Nano 5G uses an SQLite3 database instead of the mh crap: http://sourceforge.net/mailarchive/message.php?msg_name=1253887389.7476.13.camel%40satan This would require a major rework of the gnupod code to support the Nana 5G (or iPhone/iTouch 3.x).
Henrik was working on support for the latest iPod Shuffle, but I can't remember what the status is.
