Ok, this was it. I relied on octal 240 (hex a0) being a backspace ... 
It is not ! It is something completely different (damn).

Now grep '^C-vC-h' works as expected ....

Let me see, cool feature, tr has got it, no other tool seems to have it ... I 
already though about it.
