I like the discussion going everywhere, but is there a chance we get in
touch with people who really edited an encyclopedia?

As for the tag set, you can take a look at TEI by reading the relatively
small document there: http://www.tei-c.org/Lite/index.html

Given TEI is a "meta DTD", it is possible to cook a special instance of a
DTD that suits the GNUPedia project using the TEI DTD generator called
"Pizza Chef" if more elements are needed.
