enscript gets its default media size from the system default from
libpaper. You can specify a new media size with the -M option, or you
can change the system default, usually with /etc/papersize, or with an
environment variable.
If you do "enscript --list-media" you can see what all the media types
it knows are. You probably want "Letter", so add this:
-M Letter
...to your enscript command line.
