First of all, is there something wrong with your hard drive? If not, I
would think there are better tools for this job than ddrescue.

if you're still going with ddrescue, perhaps you can export a drive
using iSCSI from the target server, and make that available as a block
device on the source server. Then you can run ddrescue to copy
directly from the source drive to the target iSCSI drive, and let the
iSCSI layer handle the network transfer. I've never tried, but I guess
it should work fine.
