Req: How to change document version number from 1.0 to 2.0 directly for CVS software

Dear Sir\Madam,

We are planning to implement CVS software for document control 
management system in our organization.
During testing, I have some doubts that, how to change the 
word/Excel/PDF document version from 1.0 to 2.0 directly with valid reason.
