That's not how you escape single quotes within single quotes. Read:
https://mywiki.wooledge.org/Quotes#Types_of_quoting
The proper way would be: run 'sed -i "6a\find /srv/cowrie/log/ -mtime
+7 -name '\''cowrie.*'\''...
