That would be fine except that "chet.meal" is not a valid variable
name. Try this instead:
eval "${NAME}_meal="'"$MEAL"'
eval 'echo "$'"${NAME}"'_meal"'
(This version also ensures that the contents of $MEAL are not
re-expanded.)
