How to open a video file with separate subtitles on the Mac:

File->Open files (you should get a dialog window which tells you you can open 
multiple files).
In the file selection dialog, select the mkv and the srt with cmd-click.
select the subtitle track in the main bino interface.

Note that you cannot open multiple files with Bino from the Finder (right 
click-> open with) due to a Qt bug/limitation on the mac.

I'll put that as a FAQ on the download page
