Hi,
If you want to go USB, check out the USBN9603 chip from National
Semi. It is an all-in-one solution for USB communications and can be
inferfaced via an 8bit bus, or through SPI. It only requires a few
resisters, caps, and of course.. a USB connector.

I have no experience in the matter but
I would imagine you need to use some kind of interface chip. I don't
know what interface those chips use but I doubt it's UART or SPI
compatible. You will probably have to write some custom code that uses
some port pins.
Let us know if you find a workable interface chip.
Perhaps there are low datarate chips out there used for small
handhelds.
