I'm not Stefan, but I tend to agree.  My suggestion is to check if modes
provided by AUCTeX in `TeX-modes' are part of
`major-mode-remap-defaults', i.e.,

  (LaTeX-mode . latex-mode)
  (plain-TeX-mode . plain-tex-mode)
  (TeX-mode . tex-mode)

and then `assq-delete-all' them before adding the entries on top of that
list.
