AUCTeX uses font-lock.el for font locking. So the problem likely does
not lie between MMM mode and AUCTeX (or font-latex for that matter)
but between MMM mode and font-lock.el. That's especially the case
with inline math marked with dollar signs where syntactic font locking
is used.
