The following wording is grammatically incorrect: '... is actually the name of
one of the author’s former professor Octave Levenspiel who wrote a famous
textbook ...'.

I would suggest the following: '... is actually the name of one of the
authors' former professors, Octave Levenspiel, who wrote a famous textbook
...'.
