Je te propose de redéfinir la variable "defaultNoteHeads" de la minière
suivante:

defaultNoteHeads =
{
\defaultNoteHeads \revert Stem.stencil
}
%%%%%%%%
Ainsi, tu obtiens le résultat souhaité sans retoucher au code.
