Wouldn't a wrapper be more appropriate? Something like this:
(defvar my-find-grep-dired-default "/tmp/"
"Specifies the default search directory for my-find-grep-dired")
(defun my-find-grep-dired (regexp)
(find-grep-dired my-find-grep-dired-default regexp))
