Thanks for the report.  I believe this has already been fixed in a
later release.  The sh-utils package uses the help2man program which
produces the man pages from the command --help output.  It appears
that the problem you report has been fixed with a later version of
help2man and the format of the output is now different.  The backslash
character is now formatted using \e now and so in the above examples
those now look like "\eNNN" instead.
