Looking at this site:

  https://github.com/rossabaker/lsp-scala

I see this:

  (defcustom lsp-scala-server-command "metals-emacs"
    "The command to launch the Scala language server."
    :group 'lsp-scala
  :type 'file)

So maybe we do need to support both names.
