Strings are allocated via allocate_string -> lisp_malloc -> lmalloc, and lmalloc is supposed to align to LISP_ALIGNMENT for strings just like it does for other Lisp objects. String data (struct sdata) is not Lisp-aligned, but it doesn't need to be.
