There aren't too many subdirectories in doc/, so perhaps something
like
doc/emacs/*.html
doc/lispintro/*.html
doc/lispref/*.html
doc/man/*.html
doc/mis/*.html
and similarly with *.ps will do?
OTOH, is "**" supported by Git 1.7.1?
